December catch up

Thursday, 15 January 2015

I miss Pinkberry, Snog isn't the same. He would not get off, it became his 'happy place' for about 10 minutes. A christmas hat can turn anything festive, even a chinese. Turning a healthy salad into something not so healthy. Attractive bowling shoes. Wild work party. I will take 2nd place (even though my score was still rubbish). Tea and croissants make mornings bearable. It's the little things that count, treats from Jake after a rubbish day.
Terrible photo but a tasty sweet potato and goats cheese burger. Snapchat entertainment. Made Max a castle for his Birthday. Look at that face, adorbs! Mexican night with my chicas. Cute christmas lights in Covent Garden. Plus a massive christmas tree. Cocktails with my Mumma and Sister. Followed by salad to try to counteract the calories?
Doing the rounds with festive cupcakes. What else do you do on Christmas Eve with your friends? Mum upped her game with the table decoration this year. Completed with an enormous plate of food. The pets love their new beds. Christmas pud. He's smiling but he was secretly mad at me for going over the budget. Love this but, lame or cool? Boxing day fry-up, what more could you ever want.
Hot choc in the new mugs (from me). This was such a good salad, well done Wahaca. She is the cutest doggy. Decided to try Hoops as well as Pole. Oh, and Silks-not sure I will have time for both these hobbies too. Received some very sad news about Skye just after Christmas. Fairly quiet NYE with one of my besties. Jake was also there to see in 2015 with me. Half price boots, do I really need to justify that?

Woah, between Work, Birthdays, Christmas and 2 weeks time off, December was a very busy month. I had so much fun celebrating Christmas with everybody I love and I couldn't wish to have had a better end to the year. 2014 was great, 2015 will be even better and I already have so much to look forward to, including 3 holidays, yipee.

Lunch time recipe post coming next for you guys. Keep your eyes peeled!

Chocolate oreo cupcakes

Wednesday, 19 November 2014

Hello hello. There is nothing I love more than baking and eating cakes and I adore my Hummingbird bakery cookbook more than any other recipe book I own. However, there are only so many icing combinations that you can pair with a plain sponge so I did the fairly standard twist-add oreos.

Make your chocolate cake mix by beating 100g plain flour (sieved), 20g cocoa powder (sieved), 140g caster sugar, 1 1/2 tsp baking powder, pinch of salt and 40g unsalted butter. Then mix in 120ml milk, 1 egg and 1/4 tsp vanilla extract ( I may have got my little brother to do all this).

Split equally into 12 cupcake cases and then push a whole oreo to the bottom of each case. Place them into your pre-heated oven (170 degrees) for around 20 minutes or until a skewer comes out clean. Leave to cool in the tin whilst you prepare your buttercream. I decided to go with cream cheese frosting but you could always make oreo buttercream by stirring crushed oreos into your standard buttercream mix.

Beat 300g icing sugar and 50g unsalted butter together until light and fluffy (around 3 minutes) and then mix in 125g cream cheese. Once your cakes are cool you can pipe/smother them in the frosting and top with whatever you fancy.

Don't forget-you aren't obligated to share these with anyone, we won't judge you if you eat all 12 because they really are delicious.

I think I might try to create Jaffa Cake cupcakes next time, stay tuned.

xoxo

October catch up

Thursday, 6 November 2014

Wildwood burgers and a gossip. Followed by delicious sticky toffee pud. New cook shop opened in Bluewater & I love it. Birthday presents from the office. Birthday bacon. Isn't my bestie cute. Jake really enjoying my company. Lemonade served adorably. And erm maybe some more sticky toffee pudding.
Off to the zoo zoo zoo. This lemur wasn't letting the otters have the attention. Donkey selfie. Hiding from the seagulls under my hat. How freaking adorable. Vintage cupcakes. More cupcakes. Trying to be cute. Love a pub roast.
Sean and Lauren's first pet. Strawberry mojito. Chicken in a basket. Someone was sick on the train and it was gross. My attempt at Huevos Rancheros. Hey kittykat. Girly spa day. Eating all the scones. Fried risotto balls.
Do you think we look alike? One of very few nice photos. Dinner selfies. My besties. Mummy and me. Love a good hot choc. Halloween make up. Bats on hallows eve. The family pumpkins.
October was one busy month for me, my 21st birthday and halloween. Filled with food, family, friends and presents. I had the most amazing birthday surrounded by everyone I love and I was completely and utterly spoilt by everyone. A trip to the London zoo and a surprise party filled my birthday weekend and then celebrations continued on to the next with a day at the spa. It doesn't even stop there, I have a holiday in Italy to look forward to as well as other various activities that will come up throughout the year. November may be a little quieter but I still have lots of things planned so don't miss the next catch up post!
